Frijoles a la charra in less than two hours with the Ninja Foodi.
Carlos and I were trying to decide if our Abuelitas would approve of my "cheater" frijoles. They are delicious and I make them in less than two hours from start to finish. There is no overnight soaking needed.
You will need:
beans, bacon, beef chorizo, vegetable broth, Rotel, onion, garlic, and jalapeno.
Seasonings: salt, pepper, paprika, cumin, mexican oregano
Chop the onion, garlic, and jalapeños. Put your foodi on saute mode. Start by sautéing the bacon and chorizo. I cook them about halfway, and then I soak up the grease with a paper towel. I add the chopped onion, garlic, and jalapeno and cook for about two minutes. Then I add the Rotel with the liquid. We use hot flavored because we like spicy food. I made one cup of beans, so I added the broth which was about halfway full, and then fill up the vegetable broth container with about 3/4 cup of water and add it to the pot.
I turn off my Foodi and add the remainder of the ingredients: Salt, pepper, cumin, paprika, and Mexican oregano. I stir it all together. I switch the Foodi to pressure mode and begin to pressure cook for one hour. If you use two cups I would probably do an hour and fifteen minutes. And thats it folks!
Delicious homemade frijoles in less than two hours. Even if our Abuelitas did not approve of my method, they would definitely approve of the taste.
